Healthy Recipe

INGREDIENTS
1 1/2 cups dry garbanzo beans
10 cups vegetable stock
4 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
1 teaspoon vegetable oil
2 pounds tomatoes, chopped
1 cup fresh basil leaves, chopped
2 pounds fresh fennel bulbs, trimmed and chopped
2 medium onions, chopped
1/2 teaspoon salt
1 cup fresh shelled green peas

DIRECTIONS
Place the garbanzo beans in a pot with enough water to cover, and soak 8 hours, or overnight. Drain and rinse.

In a large pot, stir together the soaked beans and vegetable stock. Mix in 2 cloves minced garlic and the red pepper flakes. Bring to a boil, reduce heat to low, and simmer 45 minutes, or until beans are tender.

Heat the oil in a skillet over medium heat. Place the remaining garlic, tomatoes, and basil in the skillet, and cook 2 minutes, or just until the basil is wilted. Remove from heat, and set aside.

Mix the fennel and onions into the pot with the garbanzo beans. Season with salt. Continue cooking 15 minutes. Mix in the tomatoes, basil, and peas, and continue cooking 5 minutes, until peas are tender. Serve hot.

Hey Folks -

Hope you're able to keep up with your training. I know the holidays can be a bit disruptive. Time to get back in the routine. As for me, I'm shooting for the Last Chance marathon in mid February, then the Arnold Pump and Run in early March, followed by a 50K trail run in mid-April. I'm a bit behind in my marathon training, but I am cautiously optimistic that the running gods will be cooperative. So enough about me - how are y'all doing with your goals???

Running has been put on hold for a while. I was running on the treadmill for as long as I could, but I just can’t do it anymore. I've been pretty sick. But the good news is that the testing that I have had done has found problems that are fixable. I am meeting with a surgeon in the near future. As soon as I get all this fixed up I will be back and running.
I haven't completely fallen off of the wagon though, I am still doing well on my diet. Even through the holiday's I didn't cheat too bad. I get out and walk my dogs twice a day too, although Tango still misses running. So I'm down, but not out. I'll be back on the road soon!
I really do miss being able to run. I hated it when I first started running but got to the point where I really enjoyed my runs. I will be running in the first race that I am able to with you guys!
Keep at it Gems! It's a new year and you all have a great support system to help you stick to those new years resolutions. Take advantage of your friends!

Hello!
I have been busy doing weight trianing through a class called Body Pump and running on the treadmill at my gym. I'm definitely inside working out. Even when it got warm last week, I stayed inside. I'm such a fail weather outside runner! In a few weeks, I'll be back to outside as I'm training for the Columbus half marathon on May 2 with a few other women from my neighborhood. I am hoping to do the intermediate training plan and break 2 hours on teh half. That would only require me to cut 5 minutes off my best time..seems managable?!
Glad to hear you all are sticking with it. I'll stop in when I can for the Sunday night workouts..but lately it's been my grocery time.

Well this morning I finally went and had a fitness assessment done. They took my measurements as well as body fat. I am set up to do cross training on Tuesdays and Thursday. I will do some weight training and cardio on those days. I plan to keep running on Sundays, Wednesdays and either Fridays or Saturdays. I am hoping by doing 5 days of cardio (3days running and 2 days on an elliptical) I can get some of this weight off.

Goals:
1. Lose 30 pounds by June
2. Participate in a 5K and actually be able to run the entire 3.1 miles and in less than 40 minutes

I think that we should all set some good goals for ourselves and if we can meet them by say May or June-a big reward for us all. Any thoughts on what we can do to celebrate accomplishing our goals?

Once again, I would love to see everyone on Sundays (inside if you hate the cold weather). It was a great workout-my arms are still sore.!!!

Hi all - it sounds like everyone is getting in some running and exercise - keep it going!! I get motivated to keep on running by setting race time goals and my big goal for this year is to qualify for the Boston Marathon (in my age group 45-49 the qualifying time is 3:30). I'm training for the Last Chance Marathon in Dublin in February and hope to break 3:40 in that race. I've got my longest training run coming up this weekend (22 miles). After that, I'll run the Columbus Distance Classic (1/2 marathon downtown on the first weekend of April) and I may try an out of town marathon (Cincinnati has one in May and Nashville has one in late April) depending on how I'm feeling. I hope to qualify for Boston during the Columbus Marathon in October. I usually run a bunch of races in teh summer to get geared up for the Columbus Marathon.

As we get closer to Saturday I will let you know if I can make it to the run on Saturday. I will probably have kiddos with me so as long as the weather is OK I will be there.

Bob,I had no idea who Piggytail was either till I met her. She is "Coach Kelly" from previous Panther years.

I'm here! And it's so hard to stay motivated to work out. It's so much easier to sit on my couch and eat pizza and ice cream...

I worked out with my trainer, EveAnn, this morning. It was legs and boy oh boy, are my legs going to be sore tomorrow! It was rough going this morning when the alarm went off at 5:15 a.m. But once I got there, I was motivated. I then did 35 minutes on the bike at Lifestyle before showering and heading to the grindstone.

I have decided that I am not going to set any definitive goals for myself. I find that I only disappoint myself. I am however, going to aim to continue to work out at least 4-5 times a week and to start eating much better. Those two items will help me lose weight and get back into shape. The end result, whatever it may be, will be better than I am today, so that's my goal!

I would love to meet you guys on Sundays, but the gym is just so far away from my house. If a Saturday meet at Antrim can be worked out, I'd love to join y'all for that. Several years ago, Em, Piggytail (lol) and I would meet almost every Saturday at Antrim for a job and then a snack! Those were the best days!

Nicole has been sick and we have been traveling a lot for the holidays.

So we have been getting nice and plump.

So I'll be at homestead at 4:00 on Saturday. I gotta leave by 4:45 so I can be at Midwest by 5:00 since Glam has practice from 5-7:00

We'll be in Indy next weekend so I'll plan to walk/run while I'm there. Maybe Debra, Abigail, Constance and katie will work out with us....

I'll plan to do the Frozen Nose on January 24. Fun stuff!

You want me to sign up for something that has the word "frigid" in it?? Are you crazy??

I took the funnest class at the gym last night. It's called "Dance Jam". The instructor (Alexander) is a marshall arts expert and also a professional dancer. He taught us a bunch of simple choreography and we spent 60 minutes dancing (and sweating) to popular pop songs. So much fun! I could definitely do that EVERY NIGHT!!!!

I had to laugh Katie-yes the names Fantastic Frigid and the Frozen Nose don't really help motivate those who don't like the cold. But you never know, they could turn out to be warm days (but just in case I won't register in advance for any race this time of year).

Speaking of weather probably won't make the Saturday run at the park-looks like the weather is turning nasty.

The "Dance Jam" class sounds like fun. I really don't mind the exercise if its fun. Is this at the gym where Constance works?

Well I can honestly say that I will not be coming to the park to run today. I can handle the cold, but not ice!!

I will resort to Wii Fit today. Hoping to unlock the advanced step aerobics session today. According to the wii fit I have lost 3 pounds this week and my BMI also lowered.

Only a couple more months until the weather will be better, yippee!!!!

How are the sidewalks around Midwest? Just wondering if we will be able to run tomorrow. I will probably go the the gym tomorrow and then meet up with everyone at 6:00 to lift tomorrow.

Hi everyone!

Em, thanks for the texts to check the blog, sorry it has taken soooo long but post-holidays is one of the busiest for my business of health and fitness with all of the new years resolutions.
I have been busy meeting tons of new people in classes which is awesome and working with the Jerome Girls Lacrosse team is refreshing as we prepare for their spring season.
I have been squeezing in treadmill or elliptical time when I can but look forward to hopping on the spinning bike to break up the routine. I do not like the cold except from the windows of my house!
I am glad Katie is enjoying the Dance Jam class at Lifetime Fitness and no I don't work there, Vickie. You will find me at Good Bodies Personal Fitness, Tartan Athletic Club, The Muirfield Country Club and various corporations that I visit or I see several clients in their homes. Katie and I have been working on wellness goals for herself that include fitness but also stress management, nutrition and forming reasonable goals for overall good health.
Everyone enjoy the new energy you have found in the new year and remember to breathe!
